Garlic Bhindi

Ingredients-
- 12-15 bhindi (okra)
- 4 large cloves garlic, sliced thin
- 1 T oil
- 1 T fresh lemon juice
- salt and freshly ground pepper to taste
Instructions-
- Wash and thoroughly dry the okra with a kitchen towel. Remove stem ends and tips and make a long slit in each bhindi.
- Heat the oil in a nonstick pan, add the garlic and saute 4-5 seconds without browning it.
- Add the okra, salt and saute for a few minutes till tender. Do not cover.
- Add fresh ground pepper. Remove from heat, stir in lemon juice and serve hot.
Note : It is important to dry the okra well to avoid stickiness.
